Dragon Well Green tea This is China's most famous tea and simply the best of all Long Jing variety. Xi Hu Long Jing has more than a thousand years of recorded history and was mentioned in the first ever tea book (Cha Ching) by Lu Yu during the Tang Dynasty. So popular that even Queen Elizabeth II, former US President Richard Nixon, and Henry Kissinger once tasted this tea during their visit to China. Taste: Soothing aroma and a delicately sweet taste. Hint of chestnut fragrance and flavor. Appearance: Flat and narrow green tea leaves. 1 bud 2 leaves. Long Jing tea or Dragon Well is a famous variety of green tea from Hangzhou, Zhejiang Province, China where it is produced mostly by hand and has been renowned for its high quality, earning the China Famous Tea title. Long Jing is often called the national drink of China and is frequently given to visiting heads of state. It is also a favorite tea of today's top leaders, with a portion of production reserved for government customers. Like most other Chinese green tea, Longjing tea leaves are pan fired (not fried) to stop the fermentation process. In the world of tea, the term "fermentation" refers to the drying of the freshly picked leaves, resulting in enzymatic oxidation. This oxidation is stopped by frying or steaming the leaves before they completely dry out. As is the case with other green teas, Longjing tea leaves are unfermented. When steeped, the tea produces a yellow-green color, a gentle, pure aroma, and a rich flavor. The tea contains Vitamin C, amino acids, and has one of the highest concentration of catechins among teas, second only to white teas. The name of this tea literally means "dragon well", a well that contains relatively dense water, and after rain the lighter rainwater floating on its surface sometimes exhibits a sinuous and twisting boundary with the well water, which is supposed to resemble the movement of a traditional Chinese dragon. It was widely known that to achieve the best taste from Longjing, spring water from the "Hu Pao Quan" was to be used. Water is boiled then cooled to about 80 degrees celsius before being used to brew the tea leaves. Chinese Green Tea: Chinese Green tea is light and refreshing. Well known for its many health benefits, Chinese Green tea helps to prevent cancer, lowers cholesterol & blood pressure, strengthens the immune system, prevents cavities, reduces stress and regulates ageing. Tea Storage: Careful storing of your teas are important to keep quality loss to a minimum. Here are a few guidelines: • Use vacuum-sealed bags or containers. • Keep away from sunlight and heat. Tea should be stored in a cool, dark place. • Keep away from places with strong odors. • Keep tea packaged in small quantities as dampness (e.g. steam) can damage it while you are measuring out. • Store green tea in the refrigerator in summer time to keep it fresh. It is also important to know that each type of tea has a different shelf life. The taste of Green tea begin to deteriorate within a year while Black and Oolong teas can be stored for several years with little loss of quality. Cooler box is a good place to store your teas. Wrap the tea leaves in 2 layers of paper (use a thicker material for the outer layer) before storing it in the cooler box. It can keep the tea leaves fresh for months. Green Tea Brewing Recommendation: We recommend using glass-based or porcelain tea ware. Rinse tea cup and teapot with hot water. Use about 2 grams of tea leaves (1-2 teaspoons) for every 150ml of water. Steep tea leaves in hot water at 70°c (158°F) to 80°c (176°F) for 1 minute for the first and second brewing. Gradually increase steeping time and temperature for subsequent brewig.
