Introduction This purple rice is poaceae, a kind of Oryza. As intermediates and additive the anthocyanidins extracted from Purple Rice bran is widely used in food staff, health care and cosmetics etc. Function The dark purple color of Purple rice differ from others is primarily due to it’s high anthocyanidins contents which is strong anti-aging. it also contains high amount of melanin of which mainly consist of flavone compound which has similar function of VP. The purple rice contains compound of alkaloid, phytosterol, tannin, which could strengthen the body’s immune systema immunity, nutriate humen body, it is also helpful of anti anaphylaxis, anti-aging etc.
